The practical answer

Use two native Mac display streams. The iDock M10 does this through two USB-C ports on supported MacBooks. Desktop-style KVMs also work when the Mac or dock exposes one independent video output per display. Avoid a single-cable Multi-Stream Transport (MST) promise for dual extended macOS desktops.
